So you know when you do Slimming World, you’re
meant to love crustless quiche?
Well, I hate it. The texture makes me feel
really weird.
So in a bid to try and like it, I added some
leftover rice. GAME CHANGER!
See below for my syn free crustless quiche
recipes. One vegetarian and one for the meat eaters.
Crustless Quiche Muffins
INGREDIENTS:
Leftover rice
4 Large eggs
Large Handful of chopped spinach
Large Handful of chopped rocket
2 Courgettes (grated)
1 Packet of mushrooms
1 Packet of wafer thin ham
Salt and Pepper (to taste)
Few sprays of Fry Light (whichever you have/
prefer)
METHOD:
Preheat the oven to 180 degrees.
Take the leftover rice and add in the eggs.
Mix through until the eggs are beaten.
Grate the courgettes and chop the mushrooms
and fry off with fry light until cooked through.
Once cooked, add to the rice and egg mixture.
Stir through thoroughly and add salt and
pepper.
Chop all of the spinach and rocket and mix
through.
Spray the muffin moulds with Fry Light and fill
with the mixture.
Chop up the tomatoes and place on the top of
each muffin.
Add some fresh black pepper and a spray of Fry
Light.
With the remainder of the mixture, add the
chopped wafer thin ham.
Spray another muffin tray with Fry Light and
spoon in the mixture.
Spray the top of each muffin with Fry Light
and sprinkle chilli flakes over the top.
Bake for around 15 minutes or until golden
brown.
The mixture will look quite heavy before it
bakes and then once it’s baked, they are dense but fluffy.
You can add anything you want into these!!! I
chuck whatever I have in and they are always enjoyable. Also works well for me
because I always cook too much rice!!
I have these as a savoury syn free snack or as
part of lunch with salad.
